Serves 8
Ingredients:
2 pounds green beans, stem ends removed
4 tablespoons unsalted butter
2 large shallots, minced
Salt and pepper
Bring a large pot of water to boil. Blanch the beans till tender. Pour through a colander and rinse with cool water to stop the cooking. When ready to serve, warm the butter in a pan, add the shallots and cook them till translucent. Add the beans and turn them in the butter to coat.
