Cuccidati (Sicilian Fig Cookies)

Makes 4 – 5 dozen cookies

Ingredients
For the filling:
8 ounces dried figs, chopped
4 ounces citron or candied pineapple
2 ounces raisins
2 ounces dates
2 cup walnuts, toasted
½ cup honey
½ cup orange marmalade
Grated rind of a lemon
½ teaspoon cinnamon
¼ teaspoon nutmeg
2 pinches ground clove
6 tablespoons brandy

For the pastry:
2 ½ cups flour
1/3 cup sugar
¾ teaspoons baking powder
½ teaspoon salt
12 Tablespoons unsalted butter, cut up
2 eggs
¼ cup milk
1 egg, whisked with 1 teaspoon water for an egg wash

For the icing:
1 cup powdered sugar
½ teaspoon vanilla
1-2 tablespoons milk
rainbow sprinkles

To make the filling combine the chopped figs with the brandy and let soak over night or up to 4 weeks. Place the soaked figs and the remaining filling ingredients in a food processor and chop them to combine or grind them through a meet grinder. Keep chilled till ready to use.

To make the pastry, place the dry ingredients in a mixing bowl with paddle attachment. Add the cut up butter and mix till it looks like fine crumbs. In a small bowl whisk together the eggs and milk. Add the liquid and mix just till combined. Form into a disk and chill 30 minutes.

On a floured surface roll out the dough into a rectangle 1/8th inch thick. With a sharp knife or pizza cutter, cut into 3 ½ inch wide strips. Roll the filling in to a 1 inch thick log and lay it down the middle of the pastry strips them fold the dough over to encase the filling, over lapping the dough slightly. (You may have leftover filling) Place it seam side down on a parchment lined sheet pan and chill while you make the rest. Once all the dough is rolled and filled and chilled, cut the logs straight across or at a slight slant into 1 inch sections and place them 1 inch apart on parchment lines sheet pans. (You may also shape and carve them into fancier shapes like Christmas trees, leaves, fish, wreaths, etc.) Bake them at 350 till light golden brown, about 20 minutes. Ice them when they’re still hot and shake on the sprinkles. To make the icing combine the ingredients with a small whisk.
