Poppyseed Cake

Makes one Loaf

Ingredients
2 ½ ounces poppy seeds (about ½ cup)
1 cup milk
2 eggs
¾ cup oil
1 ½ cups sugar
½ teaspoon vanilla and almond extract
2 cups flour
¼ teaspoon cinnamon
2 ½ teaspoons baking powder

Soak the poppy seeds and milk together for 1 hour. Then stir in the eggs, oil, sugar and flavorings. In a separate container add the cinnamon and the baking powder to the flour and combine, then add it to the wet ingredients and stir till smooth. Pour into a parchment lined or greased and floured loaf pan and bake at 350 degrees Fahrenheit for 45 minutes, till firm in the center of the cake.
