Ingredients
2 cups flour
2 teaspoons baking powder
1 teaspoon sugar
½ teaspoon baking soda
½ teaspoon salt
¼ teaspoon fresh ground pepper
4 Tablespoons unsalted butter, cut up
¼ cup fresh snipped chives
1 5-ounce log fresh goat cheese
1 cup buttermilk (plus extra for brushing)
Preheat the oven to 400 degrees Fahrenheit.
In a food processor combine the dry ingredients by pulsing a few times. Add the butter and pulse till sandy looking. Add the chives and goat cheese and pulse a few times, then add the buttermilk and pulse in. Place dough on a lightly floured surface and form into 2 balls. Place them on a parchment lines sheet pan and flatten them to about 1 inch to 1 ¼ inch thick. Flour a bench scraper and use it to cut the disks into eighths, keeping them together. Redip the scraper in flour if needed. Brush with a little buttermilk. Bake at 400 degrees for 25 – 30 minutes. Serve warm or room temp.
