Serves 6 – 8
Ingredients
2 cups almonds, toasted
1 cup sugar
2 cups cream
3 eggs, divided
1 cup sugar, divided
½ teaspoon almond extract
In a sauce pan cook the 1 cup of sugar till caramelized then add the almonds, stir and pour onto a silpat to cool, then chop. Whip the cream till stiff and chill. Whip the yolks with 1/2 cup of sugar till light and fluffy. Whip the whites till soft peaks then add ½ cup sugar and whip till stiff Fold the 4 parts together plus the almond extract and pour into a plastic wrap lined pan then freeze. Serve in slices or squares topped with chocolate sauce if desired.
